Whoopie Pies w/ Marshmallow Filling

No special pan needed. Ingredients: Cake batter: 1 cup brown sugar (200 grams) 1 stick butter (113 grams) 2 cups all purpose flour (285 grams) 1/2 cup cocoa powder (43 grams) 1 teaspoon baking soda 1/2 teaspoon table salt 1 egg (room temperature) 1 teaspoon vanilla 1 cup buttermilk (240 ml) Filling: 1 and 1/4 cups powdered sugar (140 grams) 1 and 1/2 sticks butter (160 grams) 1 and 1/2 teaspoons vanilla extract 2 and 1/2 cups marshmallow cream (380 grams) pinch of salt This makes two trays of the little cakes or 6 whoopie pies. I baked them for 15 minutes @ 350F I recommend that you place your filling on 6 of the halves before placing the other half on, so that you distribute the filling equally.   1. That’s such a good idea to use buttermilk. I usually use regular milk or whatever’s in my fridge. Next time I make these, I’ll keep in mind the buttermilk!

  3. Thank you for your question. Baking chocolate will be labeled as such on the package. Baking chocolate doesn’t have sugar in it and has a very instense and strong chocolate flavor. Happy baking!

  9. don’t do that… when you wash the eggs you ‘break’ a thin layer on it that prevents air from going inside, so they would get “old” way faster… just give them a little wash before using them

  11. Oh lord. This is probably about salmonella, isn’t it?
    Well, to get this out of the way: only 0,003% of all eggs actually contain salmonella. This means that an average person comes across a with salmonella infected egg once every 42 years. Most of them are cooked, which kills the bacteria. So really, the changes of getting salmonella infection as a person without any auto-immune diseases is close to nil.

  12. I made it. Turned out, TIPS: add some chocolate. It will change the texture alil. Also use good ingredients. Cheaper sugar takes longer to desolve, blend longer. You must use raw eggs to call it french silk

  13. for anyone who doesnt know, salmonella and other food poisoning relating to raw eggs are caused to dirty shells, most of the time, not because of the egg inside the shells. my mother used to tell me as a kid to always wash your eggs right after buying them from the supermarket/market.
